The aromatic flavor of fennel and the crisp taste of caesar (paleo) dressing make this salad the perfect side dish for a summer barbecue or picnic. For me, fennel was always one of those funny vegetables that I always looked at, wondered how to cook it, and then placed it back on the shelf and continued shopping. No excuses now with this recipe!


Slice fennel thinly. Place on pan and roast at 400 degrees F for about 20 minutes. Remove from oven and allow to cool. Take mixed greens and cover with caesar dressing. Top with roasted fennel and enjoy!
